Understand carryover heat

An egg continues cooking after leaving the pan. A heavy vessel and thick portion retain more heat. Removing slightly before the texture target can form part of a controlled method, but the final result must remain safe. A timer cannot correct for different boil intensity or an overheated pan.

Cooking in the shell

Use a consistent placement method, control the simmer and keep water quantity stable. Rapidly cooling hard-cooked eggs stops further cooking and helps service planning. FDA guidance advises firm yolk and white; a runny style requires pasteurised product or a process accepted by the food-safety plan.

Poached and fried

For poaching, gentle simmering water and an egg cracked separately reduce dispersion and protect the batch. In a pan, moderate heat sets the white without burning the base. A lid helps the top set. Edge colour alone is not evidence of cooking because thickness and starting temperature vary.

Scrambled and omelette

Low heat and movement create fine or larger curds according to style. Taking the pan off heat is part of control. For volume production, specify egg mass, pan size, heat setting and batch size. Prepared raw mix waits under refrigeration and is not topped up with a new lot.

Baked dishes, quiche and frittata

Thickness slows heating. FoodSafety.gov gives 71°C for egg dishes such as quiche and frittata. Place the thermometer in the centre without touching the pan. After cooking, serve promptly or cool rapidly in suitable shallow portions.

Use a repeatable method before relying on a tip

In a home or professional kitchen, reliable results start with a short record: number of eggs, stated size, starting temperature, vessel size, cooking time and intended result. Change one factor at a time. This prevents a difference caused by the oven, pan, storage or quantity from being wrongly attributed to the egg.

Size is a weight class, not a promise about taste, nutrition or housing. A recipe should state whether it depends on egg count or egg mass. For professional batches, weighing beaten egg can be more repeatable than counting units when available sizes change.

Document the result for the next service

After a trial, record what was actually prepared and served: batch quantity, portions sold, station time, texture variation, breakage and leftovers. Keep the relevant lot and size reference with the record, but do not turn one observation into a general claim about a product. Three comparable services create a stronger basis than one successful plate.

Date each new recipe version and communicate it to both purchasing and kitchen staff. If the planned size or pack is unavailable, approve the substitution before production. Record whether the recipe is adjusted by count or weight and who authorised the change. This prevents each shift from making a different correction.

Review the result against the original objective: consistent portion, safe cooking, service time, cost and waste. Improvement can involve a smaller batch, different vessel, clearer storage position or a delivery change rather than a different egg. Assign the action and a review date so the note becomes a decision, not an archive.

Keep purchasing and receiving aligned

The purchase specification states range, size, pack, quantity, city and frequency. At receiving, staff compare quantity, shell condition, lot and the agreed product before storage. A substitution is not accepted silently because it can change recipe mass and cost. The lot record stays with the eggs after the outer case is opened, supporting both stock rotation and a precise response to a complaint.

The food-safety foundation

A clean, uncracked shell can still contain bacteria. Wash hands, clean equipment and keep raw egg away from ready-to-eat food. FDA guidance advises cooking eggs until white and yolk are firm and egg dishes to 71°C. A recipe served raw or lightly cooked should use an appropriate pasteurised egg or egg product.

Serve cooked dishes promptly or hold them under a validated safe-temperature procedure. FDA guidance says not to leave cooked eggs or egg dishes at room temperature for more than two hours, or one hour above 32°C. These international references do not replace Moroccan requirements or a restaurant’s own food-safety plan.
