In brief. Roasting is a controlled heat treatment that can deepen carob’s colour, reduce some raw or acidic notes and create sweeter, toasted aromas. It does not turn the pod into cocoa, and a darker roast is not automatically better. Time, temperature, piece size, starting moisture, airflow and cooling interact, so a useful pilot changes one factor at a time and records the sensory and process results.
Heat changes aroma, not just colour
Carob pulp naturally contains sugars, acids and many volatile compounds. During heating, existing volatiles can decrease while new aroma compounds form through browning reactions. A 2017 study comparing unroasted and roasted pods detected a clear shift in the volatile profile, including changes associated with the characteristic aroma of heated carob.
More recent instrumental and sensory work on carob used in a chocolate-style formulation found movement from sour, fruity and cheese-like notes towards sweeter and more cocoa-like notes after roasting, while also identifying a distinct flavour gap from cocoa. This supports careful comparison, not a claim that the two ingredients are identical.
Four variables shape a roast
Temperature and time are the obvious variables, but starting moisture and particle size strongly affect how heat reaches the pulp. Thin chips can darken before larger pieces develop the same centre colour. A mixed tray therefore produces a mixed flavour even when the oven setting is constant.
Airflow, tray loading and equipment calibration matter as well. A domestic oven used for development can reveal preferences, yet its displayed temperature may not equal the product temperature. Commercial scale-up needs its own trials because deeper beds and different heat transfer can change the result.
Light, medium and dark are working descriptions
Roast names are only useful when connected to a repeatable process and a reference sample. One producer’s medium may be another producer’s dark. A simple colour chart, time–temperature record and tasting vocabulary make the terms more consistent within a project.
A lighter roast may retain more recognisable fruit and acidity; a stronger roast may emphasise toast, caramel-like or woody notes while increasing bitterness if pushed too far. The best point depends on whether the carob will be infused, baked, blended or tasted on its own.
Cooling and storage are part of roasting
Removing a tray from heat does not end every reaction instantly. Pieces need controlled cooling on a clean food-contact surface without collecting condensation, dust or odours. Packing warm material can trap moisture and make the batch less stable.
Once cool, the trial sample should be closed, labelled and allowed a consistent resting time before comparison. If one batch is tasted hot and another the next day, the conclusion mixes roast differences with temperature and time. A fair tasting uses the same grind, dose and preparation.
A small-batch trial that produces useful evidence
Start with one accepted pod lot, make pieces as uniform as practical, and divide it into coded portions. Keep one unroasted reference. Apply several conservative roast profiles, recording equipment, load, set temperature, actual observations, time, weight before and after, colour and any scorching.
Taste blind when possible. For an infusion, use identical water, dose, vessel and steeping time. For baking, use one base recipe. Record sweetness, acidity, toast, fruit, bitterness, aftertaste and overall fit rather than asking only which sample is “best”.
What roasting cannot prove
Darker colour does not demonstrate greater nutritional value, purity or safety. Laboratory antioxidant measurements made on extracts are not clinical outcomes, and they should not be converted into promises about disease or detoxification. Heat can produce desirable aromas and unwanted burnt notes at the same time.
A pilot roast is also not a shelf-life study. Before sale, Mamati would need a defined process, food-grade handling, appropriate checks, compliant labelling and evidence for the intended durability. Until those steps are complete, editorial images and tasting notes should be described as development work.

- Lot code, starting weight, piece size and initial observations.
- Equipment, load, temperature, time, airflow and cooling method.
- Final weight, colour reference, aroma notes and any scorched pieces.
- Preparation method and coded tasting results.
