In brief. Roasted carob is often described with words such as sweet, fruity, toasted, caramel-like, woody or faintly cocoa-like. Those descriptors are not a fixed formula. Pod origin and maturity, roasting, grinding and preparation all change what a taster perceives. Research can identify volatile compounds and group sensory responses, while a product team still needs a consistent tasting method for its own lots.
Aroma begins before the roaster
Carob pulp develops around natural sugars, acids and other compounds that vary with the fruit and environment. Studies of Moroccan provenances demonstrate meaningful diversity in pod and seed traits. That does not make one region universally superior, but it explains why identical heating may produce different results from two raw-material lots.
Maturity, drying and storage also matter. A clean fruity or honeyed note should not be confused with fermentation, mould or absorbed warehouse odour. Sensory screening can identify a problem, yet safety and acceptance cannot rest on smell alone.
What roasting research actually shows
A study using gas chromatography and mass spectrometry found substantial changes between unroasted and roasted carob volatiles. Some acids and aldehydes decreased, while compounds associated with heated aroma became more prominent. The result supports the everyday observation that roasting changes character, not merely colour.
A 2024 study comparing carob- and cocoa-based dark chocolate formulations reported a shift towards sweeter and cocoa-like aromas after roasting, but also a woody or bark-like note and a measurable gap from cocoa. The honest takeaway is resemblance in part of the profile, not equivalence.
Build a vocabulary customers can understand
A useful Mamati lexicon might separate fruit, sweet-brown, toasted, woody, acidic and bitter dimensions. Panellists can rate each from absent to strong and add a free note. “Caramel-like” describes an aroma impression; it does not prove caramel was added. “Cocoa-like” should be used sparingly and never as the product name.
Concrete references help. Raisin, dried fig, toasted grain, light coffee roast, caramelised sugar and clean wood can anchor a discussion, although no single reference duplicates carob. Tasters should agree on definitions before scoring coded samples.
Preparation changes perception
Fine powder releases aroma quickly and changes mouthfeel. Coarse pieces infuse more slowly and are easier to filter. Hot water lifts volatile aromas that may be muted in an iced drink, while added milk, sugar or spices can mask acidity and bitterness.
To compare roasts, use the same dose, water, vessel, time and serving temperature. If a darker sample is also brewed stronger, the test cannot distinguish roast from concentration. A blank or unroasted reference can reveal what heat added and what it removed.
Preference is not the same as intensity
A taster may detect strong toast and dislike it, while another may prefer the same sample in a cake. Record intensity and liking separately. Ask about intended use as well: the best profile for a morning infusion may not be the best for a biscuit or savoury glaze.
Small consumer sessions can guide a pilot but do not represent all Moroccan customers. Avoid reporting percentages from tiny informal groups as national demand. Keep the sample size, recruitment and question wording with the result.
Aroma language should stay within evidence
Volatile compounds are analytical findings, not clinical benefits. Terms such as antioxidant or detox should not be attached to an aroma profile. Likewise, a “natural chocolate substitute” claim can hide recipe differences in sweetness, fat, texture and allergen context.
Mamati can make a stronger promise: describe the roast transparently, give a preparation method, publish revision dates and invite useful feedback. Once a target profile is chosen, future lots should be compared against a retained reference and the documented process.

- Score fruit, acidity, toast, caramel-like, woody, bitter and aftertaste separately.
- Record serving format, dose, water, temperature and time.
- Separate perceived intensity from personal liking.
- Keep sample codes and lot records with the results.
